Ingredients

  • Celery
  • Pitted dates, chopped
  • Almond butter (or alternative nut/seed butter)

Instructions

  1. If making with your children, have them chop the celery into 1-2 inch lengths using a kid-safe knife or butter knife (assist if needed).
  2. Spread almond butter on top of the celery and top with chopped dates.

  • Head of broccoli
  • Ranch dip
  • Pretzel sticks

Instructions

  1. Take a head of broccoli and trim off just under the florets.
  2. Paint clouds of ranch dip on the plate. Put the broccoli on the plate and add pretzel sticks below as a trunk.
  3. Dip the broccoli and pretzels in the clouds and enjoy!

One of the best ways to make a picky eater more comfortable around a food is to have them play with it! There’s no pressure to eat it but it gets them to engage with the food in a new way and you never know, they might even try a bite.​ This "Pea Shapes" recipe created by Eat Pretty Darling is a super simple and engaging way for your children to play with peas!

"Learn to Love Veggies" Tip

Have your kids ever tried peas straight from the freezer? Many children prefer veggies this way! Frozen peas are easy for kids to pick up and the peas thaw pretty quickly, making them easy to eat.

Note, babies and toddlers can start eating frozen peas as soon as they start teething (bonus: they help with teething pains!).

Instructions

  1. Place the peas on a plate. Lay a cookie cutter down and fill it with a single layer of peas. Carefully remove the cutter and watch the shape be revealed!

Sweet Potato Stackers

These sweet potato stackers are just like fries but cut them into even logs and you’ve got a building just waiting to be created. Sometimes kids need to play with their food to make it a little less scary to try!

Ingredients

  • Sweet Potatoes
  • Olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 425 degrees F. Peel the sweet potatoes and cut off the sides to make it all squared. Each sweet potato should be a solid rectangle shape! Next, cut the potatoes into approximately 2 inch long rectangle logs. Do this with all of the potatoes you can. Save those odd bits that can’t be square, those are still delicious and can be baked (they're just not great to build with!).
  2. Line a baking sheet and place the sweet potato logs on it. Drizzle olive oil and sprinkle with salt and pepper. Rub the logs to make sure they are fully coated. Lay them flat on the baking sheet. Bake for 15 minutes, flip, and bake for 10 more minutes.
  3. Once the sweet potatoes are done cooking, take them out and let them cool down.
  4. Now you can use the sweet potato logs to build a masterpiece! You can even use dips like ketchup as "concrete" to help them stick together.

Sometimes kids will surprise you and take a bite of a veggie that's not cut in a "normal" shape such as a bell pepper strip or carrot "coin". Don't be surprised if your kiddo decides to take a big bite out of the bell pepper jack-o-lantern like they'd take a bite of an apple!

These Pepper Pumpkins are a festive and simple jack-o-lantern inspired snack!

Ingredients

  • Orange bell pepper
  • Dip for inside such as Hummus or Ranch
  • Food for dipping such as peppers, cucumbers, pretzels, etc.

Instructions

  1. Cut the top of the bell pepper off in a straight line. Open it up and remove the seeds and veins inside the pepper. Take your child-safe knife (or have an adult use a sharp knife) and cut two triangles out of the side of your pepper. Next, cut the shape of a mouth below the eyes. Remove the cut pieces from the pepper.
  2. Next, fill it with your favorite dip and dippers! The best part is that you can eat the whole thing after you eat the inside!

Kale "Monster" Smoothie Bowls

Kiddos scared to try kale? Make it into a sweet monster! A smoothie bowl is thicker than a smoothie but softer than ice cream. You can add a little extra milk to the recipe and drink it if you’d prefer. Frozen bananas make this snack sweet and creamy, and you really can’t taste the kale at all. This interactive and delicious snack that’s packed with kale was created by Happy Kids Kitchen for Veggie Buds Club.

"Learn to Love Veggies" Tip

This is a silly snack that your kids will definitely be excited to eat! Make sure your little chef rips up the kale leaves and adds them to the blender, so he/she knows those super greens are in there. Have a chocolate lover or a child that prefers not to see green? Add a couple tablespoons of cocoa powder and you’ve got a chocolate monster! Slice some fruit and get out toppings such as nuts or seeds and let the kiddos make silly or scary monster faces on top.

Kale "Monster" Smoothie Bowls

Yield: 1 large or 2 small smoothie bowls

Kiddos scared to try kale? Make it into a sweet monster! A smoothie bowl is thicker than a smoothie but softer than ice cream. This is an interactive and delicious snack that’s packed with kale!

Ingredients

  • 1 packed cup kale leaves
  • 1 frozen banana
  • 2 tablespoons almond butter, peanut butter, or sunflower seed butter
  • 1/4 teaspoon vanilla extract
  • 2 to 4 tablespoons milk (any kind)
  • Fruit and toppings such as strawberries, blueberries, seeds, and chopped nuts

Instructions

  1. Rip up kale leaves (be sure to remove any tough stem) and add to a blender with the frozen banana, nut/seed butter, and vanilla extract. Add 2 tablespoons of your milk of choice, but don’t add too much or the smoothie won’t be thick.
  2. Blend until smooth, adding more milk if needed. Smoothie melted or not thick enough? Blend in ice until the desired consistency is reached.
  3. Spoon smoothie “ice cream” into bowls and create a flat surface with the back of a spoon. Decorate with toppings. Enjoy!

Notes:

To make the chocolate version, add 2 tablespoons of unsweetened cocoa powder or cacao powder to the blender with the other ingredients.

What is food chaining? Food Chaining is a child-friendly treatment approach that helps introduce new foods while building on the child’s past successful eating experiences. In this process, the child is presented with new foods that may be similar in taste, temperature, or texture to foods the child already likes and accepts. If your child likes pretzels dipped in hummus, they may be open to trying cucumbers dipped in hummus!

These cucumber butterflies are so easy to make and so adorable! This is a healthy kid-friendly snack that your kids are sure to love.

Ingredients

  • Cucumbers
  • Hummus
  • Bell Peppers
  • Pretzels

Instructions

  1. Cut the cucumber into 1-inch long chunks. Don’t peel! Use a melon baller or spoon to scoop out a hole in the cucumber.
  2. Slice bell peppers into thin strips and set aside. Spoon hummus into the open cup you created in the cucumber.
  3. Stick two pretzels into the hummus to create wings and put the bell pepper strips into the front as antennae.

Get your kids in the kitchen! To make the assembly super simple for children, first fill small bowls or ramekins with each filling (i.e. cubed avocado, sliced string cheese, cooked rice, bell pepper strips, etc.). Encourage them to snack as they assemble their Cucumber Sushi!

Ingredients

  • 2 large cucumbers
  • 1/2 cup cooked brown or white rice
  • 1/2 avocado, cubed
  • 1 small carrot, cut into matchsticks
  • 1/2 cup cubed cheese
  • 1/2 red bell pepper, cut into matchsticks
  • Optional: your child's favorite dip

Instructions

  1. ​Slice the cucumbers into 1/2-inch thick slices, remove the peel if desired.
  2. Use a paring knife to hollow out the center of each cucumber slice.
  3. Stuff each cucumber slice with 2-3 of the filling options until filled. Have fun with different combinations!
  4. Optional: spread your child's favorite dip on top or dip them and eat!

Green Lunch

We love making whole meals in one color! Have your children pick 4-5 green colored foods to serve for a meal. They can even help prepare them with you! Serve them up on a color themed plate or even in a muffin tin to make it more like a sampling platter.
