4 Simple Veggie Snacktivities

Monica Irwin, the creator of Veggie Buds Club, recently Skyped with Twin Cities Live to discuss 4 simple snacktivities (1-2 ingredients!) that are guaranteed to keep your kids entertained and well-nourished. A snacktivity is simply a snack and activity combination, they are all guaranteed to make veggies fun for your kids!
Carrot Tower: Slice 1-2 carrots into “coin” shapes. Place them on a plate with some of your child’s favorite dip (i.e. nut/seed butter, ranch, or hummus). Encourage your child to stack the carrot “coins” as high as they can to make a Carrot Tower while they snack on carrots and dip at the same time. They can also use the dip as “glue” to help hold the tower together!
Bean Tic Tac Toe: Create a “Tic Tac Toe” board with 4 green beans. Use any type of veggie, snack food, or dry beans for the “X’s” and “O’s” and play Bean Tic Tac Toe with your child! Place some extra green beans on the side and encourage your child to snack on these while you play.
Peas & Cheese Necklace: Twist 2 pipe cleaners together. Place a plate of sugar snap peas and cubed cheese in front of your child and have them poke them on the pipe cleaners to make a “Peas & Cheese Necklace”. Have fun with patterns and counting as you do this activity with your child. They can eat their necklace when complete!
Popcorn Garland: Pop some popcorn, preferably unsalted and unbuttered. Prepare a needle and thread for your child (you know your child best, only have them do this activity if you’re comfortable letting them use a real needle!). Have them poke popcorn on the needle and create a garland while snacking on popcorn at the same time.

Ingredients

  • Broccoli crown

Instructions

  1. Take a raw broccoli crown and just slightly shave off the ends of the broccoli tops with a knife. If you get any larger chunks, finely dice them. Stop before you cut into the stem of the broccoli. You just want the fine little bits on the top.
  2. Use these homemade veggie sprinkles to put on top of your favorite meal!​

Corn Sunflower Food Art

Kids love sweet corn but sometimes a whole corn on the cob can be difficult to eat. Try slicing the cobs into smaller rounds and transforming them into sunflowers! The cobs are smaller so they're easier to eat and the sunflower "food art" becomes a special treat.

Transforming veggies into food art is a very effective way to get children interested in trying them! These "Corn Sunflowers" are so simple to make that your children can make them with little assistance.

Kids love sweet corn but sometimes a whole corn on the cob can be difficult to eat. Try slicing the cobs into smaller rounds and transforming them into sunflowers! The cobs are smaller so they're easier to eat and the sunflower "food art" becomes a special treat.

Ingredients

  • 1 corn cob, cooked
  • Green toothpicks
  • Black olives, sliced

Instructions

  1. Slice the corn cob into one inch rounds. Stick a toothpick in one end and top with a black olive in the center.
  2. Kids can pick them up by the toothpick or just hold them in their hands to nibble around the edges and eat the “petals” of the sunflower.

Carrot Bouquet

This adorable Carrot Bouquet food art project is sure to be a hit with your kiddos! It was developed by Eat Pretty Darling for Veggie Buds Club.

If your kiddos are still learning to like carrots, try making them into a fun flower shape! If you have a flower shaped mini cookie cutter, you could use that too. But all it takes is a few simple cuts and you will have a lovely bouquet.

Ingredients

  • Rainbow Carrots
  • Cucumber
  • Dip - we love hummus for carrots!

Instructions

  1. Peel a large carrot (if using baby carrots, no need to peel). Cut out notches in the sides of carrots to make different designs or just leave them as circles. Slice the carrots into rounds and reveal your flower design.
  2. Arrange them in a bouquet or just eat the yummy carrot flowers! Serve with a dip such as hummus or ranch.

Onion Flower

Food art is a great "tool" to help kids learn to love veggies! Transforming an onion into a flower and adding a favorite dip makes onions more approachable for picky eaters.

Simply slicing and baking turns this veggie into a beautiful bloom! Kids will love seeing the onion transform in the oven.

Ingredients

  • 1 medium onion
  • 1 teaspoon olive oil
  • 1/2 teaspoon salt
  • Ketchup for dipping (or your favorite dip!)

Instructions

  1. Preheat oven to 375 degrees F.
  2. Take the onion and carefully slice off a tiny bit of the bottom root end just so it will lay flat. Cutting to much will cause your flower to fall apart! Cut the onion in half stopping about 1/2 inch from the bottom. Turn and cut in half again, and again making sure not to cut all the way through. Making 8 sections of onion.
  3. Place the onion on a lined baking sheet and brush olive oil all over the onion letting it drip down into the slices. Sprinkle with salt and bake for 20-25 minutes or until the onion has fully bloomed! Serve with your favorite dipping sauce.

We love getting crafty in the kitchen and these celery bugs are just as fun to make as they are to eat! The great thing about celery is it can go both sweet or savory. We love getting crafty in the kitchen and these celery bugs are just as fun to make as they are to eat! Let your kids make their bugs and you might just be surprised by their creativity. From snakes to snails, ladybugs to butterflies, the possibilities are endless!

Ingredients

  • Celery
  • Filling (peanut butter, cream cheese, Greek yogurt ranch, etc.)
  • Additional fruits and veggies for decorating

Instructions

  1. Cut the celery stalks into different lengths. Spread your filling of choice to fill the middle of the celery.
  2. Turn your celery into bugs by adding heads, wings, shells, antennae, or eyes. You can even create your own made up bugs!

Purple Veggie Platter

We are excited to bring you this month's post from Katie Blauser, the creator of Eat Pretty Darling. Each month on our blog we feature a "Color of the Week" that corresponds with Veggie Buds Club's veggie of the month. December's theme is "Root Veggies Rule!", and we're having fun this month by celebrating PURPLE veggies in a yummy and kid-approved Purple Veggie Platter.

Color of the Week - Purple

This week is all about PURPLE! The neat thing is, some of the veggies we found had purple outside, but no purple to be found inside. We stuck to root veggies and the color purple and found some new things to try. We’ve been playing the matching game from Veggie Buds Club so much this month that my oldest knew exactly what to look for and their names! He had fun seeing the drawings come to life in real vegetables at the store.
We gathered up Purple carrots, Turnips, Rutabaga, and Beets. I thought it would be a fun week to see how all of the varying vegetables taste different. We sampled each one on it’s own and talked about how they taste. We all agree beets taste like dirt! Turnips were kind of spicy, Carrots were sweet, and Rutabaga was like french fries. I served them with plain yogurt but my oldest also wanted to see what they tasted like with different dips so we later added ketchup and peanut butter.

Purple Veggie Platter

Ingredients
You can use any root veggies!
  • Purple Carrots
  • Turnips
  • Rutabaga
  • Beets
  • Avocado Oil to coat
  • Salt & Pepper to taste
Instructions
  1. Preheat the oven to 425F. Peel and chop the vegetables to try and make them all similar sizes so they cook the same time.
  2. Drizzle oil on veggies and toss to coat in a large bowl. Sprinkle salt and pepper to taste. Line a baking sheet with parchment paper and lay the veggies out flat on the tray. Bake for 30-40 minutes or until soft.
  3. Serve as a sampler tray with the any dip/s of choice!

Ingredients

  • Plastic safety needle
  • String or ribbon
  • Bowl of sugar snap peas or snow peas

Instructions

  1. Tie one end of the string or ribbon to the plastic safety needle and tie a knot at the other end.
  2. String peas onto the necklace by poking them with the needle.
  3. Remove needle and tie both ends of string together to make a necklace.
  4. Now that your pea necklace is finished, it's time to wear it... and eat it!
