These yummy sweet potato quiche bites are sweet and savory and a great on-the-go breakfast, snack, or even healthy lunch box component!

"Learn to Love Veggies" Tip

This is a very flexible recipe, we suggest bell pepper & cheese as the quiche filling but ask your child, "What veggie would you like in the quiche?". Great options include broccoli, shredded carrot, spinach, tomato, and more! Giving children some control over what goes in the mini quiche bites will make them more likely to try them when they come out of the oven.

Sweet Potato Quiche Bites

Yield: Makes 24 mini quiches

These yummy sweet potato quiche bites are sweet and savory and a great on-the-go breakfast, snack, or even healthy lunch box component!

Ingredients

  • 1 sweet potato, peeled and shredded (about 1 1/2 cups)
  • 1 tablespoon neutral oil
  • 6 eggs
  • 2 tablespoons milk (any kind)
  • 1/2 red pepper, diced small (about 1/2 cup)
  • 1/4 cup cheddar cheese, shredded
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 350 degrees F. Spray cooking oil in a mini muffin tin.
  2. Place the shredded sweet potato in a bowl and add the oil, stir to coat. Scoop about 1 spoonful of shredded sweet potato into each mini muffin cup and press down and around the sides to make crusts.
  3. Whisk the eggs and milk in a large bowl. Add the diced pepper, shredded cheese, salt, and pepper and stir together.
  4. Carefully pour some of the egg mixture into each mini muffin cup.
  5. Bake for 18-22 minutes, until the eggs are set. Remove from muffin tin by running a knife around the edge of each mini quiche.

You can make your own pizza dough with more pumpkin purée mixed right in or use store-bought pizza dough for a quicker option. Either way, it’s a great recipe to get kids into the kitchen and explore this orange veggie.

Pumpkin Pizza Rolls

Pizza lovers rejoice! Pumpkin purée, cheese, and pizza dough combine to make a delicious and super kid-friendly way to enjoy pumpkin.

Ingredients

  • 1 recipe of homemade pumpkin pizza dough (recipe below) or 1 package of pre-made pizza dough (about 1 pound)
  • 6 tablespoons pumpkin purée (canned or homemade)
  • 3 tablespoons grated Parmesan cheese
  • 1/4 teaspoon garlic powder
  • Pinch of salt
  • 1 cup baby spinach, chopped (optional)
  • 1 1/2 cups grated mozzarella cheese

Instructions

  1. Preheat oven to 350 degrees F. Line a round or square baking pan with parchment or grease well with oil.
  2. Roll pizza dough out as thin as possible making a large rectangle measuring about 15-by-12 inches. If using a ball of store bought pizza dough, it may take some time to get the dough rolled thin.
  3. In a small bowl, mix pumpkin purée, Parmesan cheese, garlic powder, and salt. Spread pumpkin mixture evenly across the pizza dough rectangle, leaving a small border around the edges.
  4. If using spinach, sprinkle evenly over the pumpkin layer then add a layer of shredded mozzarella.
  5. Starting with the longer side, roll the dough into a log. Cut into 12 equal rounds then place them in the prepared pan. Bake until cheese is bubbly and golden brown, about 20 minutes. Serve warm.

Homemade Pumpkin Pizza Dough

Enjoy this homemade pizza dough with pumpkin purée mixed right in!

Ingredients

  • 3/4 cup whole wheat flour
  • 3/4 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon fine salt
  • 1/2 cup pumpkin purée (canned or homemade)
  • 2 tablespoons olive oil
  • 1 teaspoon honey (optional)

Instructions

  1. Add flours, baking powder, and salt to a large bowl or the bowl of a food processor. Mix to combine.
  2. Add the pumpkin in a 1 cup liquid measuring cup then add enough water to make 1 cup of pumpkin and water mixed. Add pumpkin mixture, olive oil, and honey to the bowl/food processor and mix until no dry flour remains. If dough is too dry, add another tablespoon of water at a time. Remove dough and knead on the counter to get a uniform ball of dough. Set aside to rest for 5 minutes before using.

Sometimes kids will surprise you and take a bite of a veggie that's not cut in a "normal" shape such as a bell pepper strip or carrot "coin". Don't be surprised if your kiddo decides to take a big bite out of the bell pepper jack-o-lantern like they'd take a bite of an apple!

These Pepper Pumpkins are a festive and simple jack-o-lantern inspired snack!

Ingredients

  • Orange bell pepper
  • Dip for inside such as Hummus or Ranch
  • Food for dipping such as peppers, cucumbers, pretzels, etc.

Instructions

  1. Cut the top of the bell pepper off in a straight line. Open it up and remove the seeds and veins inside the pepper. Take your child-safe knife (or have an adult use a sharp knife) and cut two triangles out of the side of your pepper. Next, cut the shape of a mouth below the eyes. Remove the cut pieces from the pepper.
  2. Next, fill it with your favorite dip and dippers! The best part is that you can eat the whole thing after you eat the inside!

Kale "Monster" Smoothie Bowls

Kiddos scared to try kale? Make it into a sweet monster! A smoothie bowl is thicker than a smoothie but softer than ice cream. You can add a little extra milk to the recipe and drink it if you’d prefer. Frozen bananas make this snack sweet and creamy, and you really can’t taste the kale at all. This interactive and delicious snack that’s packed with kale was created by Happy Kids Kitchen for Veggie Buds Club.

"Learn to Love Veggies" Tip

This is a silly snack that your kids will definitely be excited to eat! Make sure your little chef rips up the kale leaves and adds them to the blender, so he/she knows those super greens are in there. Have a chocolate lover or a child that prefers not to see green? Add a couple tablespoons of cocoa powder and you’ve got a chocolate monster! Slice some fruit and get out toppings such as nuts or seeds and let the kiddos make silly or scary monster faces on top.

Ingredients

  • 1 packed cup kale leaves
  • 1 frozen banana
  • 2 tablespoons almond butter, peanut butter, or sunflower seed butter
  • 1/4 teaspoon vanilla extract
  • 2 to 4 tablespoons milk (any kind)
  • Fruit and toppings such as strawberries, blueberries, seeds, and chopped nuts

Instructions

  1. Rip up kale leaves (be sure to remove any tough stem) and add to a blender with the frozen banana, nut/seed butter, and vanilla extract. Add 2 tablespoons of your milk of choice, but don’t add too much or the smoothie won’t be thick.
  2. Blend until smooth, adding more milk if needed. Smoothie melted or not thick enough? Blend in ice until the desired consistency is reached.
  3. Spoon smoothie “ice cream” into bowls and create a flat surface with the back of a spoon. Decorate with toppings. Enjoy!

Notes:

To make the chocolate version, add 2 tablespoons of unsweetened cocoa powder or cacao powder to the blender with the other ingredients.

"Learn to Love Veggies" Tip

What is food chaining? Food Chaining is a child-friendly treatment approach that helps introduce new foods while building on the child’s past successful eating experiences. In this process, the child is presented with new foods that may be similar in taste, temperature, or texture to foods the child already likes and accepts. If your child likes pretzels dipped in hummus, they may be open to trying cucumbers dipped in hummus!

These cucumber butterflies are so easy to make and so adorable! This is a healthy kid-friendly snack that your kids are sure to love.

Ingredients

  • Cucumbers
  • Hummus
  • Bell Peppers
  • Pretzels

Instructions

  1. Cut the cucumber into 1-inch long chunks. Don’t peel! Use a melon baller or spoon to scoop out a hole in the cucumber.
  2. Slice bell peppers into thin strips and set aside. Spoon hummus into the open cup you created in the cucumber.
  3. Stick two pretzels into the hummus to create wings and put the bell pepper strips into the front as antennae.

Get your kids in the kitchen! To make the assembly super simple for children, first fill small bowls or ramekins with each filling (i.e. cubed avocado, sliced string cheese, cooked rice, bell pepper strips, etc.). Encourage them to snack as they assemble their Cucumber Sushi!

Ingredients

  • 2 large cucumbers
  • 1/2 cup cooked brown or white rice
  • 1/2 avocado, cubed
  • 1 small carrot, cut into matchsticks
  • 1/2 cup cubed cheese
  • 1/2 red bell pepper, cut into matchsticks
  • Optional: your child's favorite dip

Instructions

  1. ​Slice the cucumbers into 1/2-inch thick slices, remove the peel if desired.
  2. Use a paring knife to hollow out the center of each cucumber slice.
  3. Stuff each cucumber slice with 2-3 of the filling options until filled. Have fun with different combinations!
  4. Optional: spread your child's favorite dip on top or dip them and eat!

Cucumber Melon Cooler

Cucumber and melon make such a great flavor combination in this refreshing summer drink created by Happy Kids Kitchen for Veggie Buds Club!

​This recipe presents kids with the chance to practice those knife skills and chop up some cucumbers. Since the cucumber is getting blended in the end, you don’t have to worry about what size or shape kids cut the cucumber and melon pieces into. Throw the peeled, chopped cucumber into the blender with some melon, a little lemon juice, and a touch of sweetener (if you’d like) and blend it all up. I used a Honeydew melon to keep the blended juice green, but you can use any ripe, sweet melon for this recipe.

Kids can experience the taste of cucumber without having to chew it, so this drink is great for little ones that might be apprehensive about the texture of cucumber.

Ingredients

  • 2 cups peeled, roughly chopped cucumber (about 1 medium-sized cucumber)
  • 2 cups diced ripe melon (such as Honeydew)
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon sugar, honey, or other sweetener of choice​

Instructions

  1. Add all ingredients to a blender. Blend until smooth.
  2. Serve over ice with extra cucumber slices and/or balls of melon, if desired.

Easy Tomato Salsa with Baked Tortilla Chips

This salsa is made in a food processor, so you don’t have to worry about chopping tomatoes all day. Add a few other ingredients and you’ve got a delicious snack to eat with chips, on tacos, or with a variety of food! Homemade chips are really fun for kids to make at home (recipe below), but you can serve this salsa with store-bought chips as well.

*Please be aware that tortilla chips can be a choking hazard or are hard to chew for toddlers and kids under 4*

This salsa tastes fresh and tomato-y, not spicy at all, therefore it is very kid-friendly!
Get your kids in the kitchen: they can help cut the tomatoes into rough chunks, add the ingredients to the food processor, and pulse until everything is roughly chopped.

Fresh Tomato Salsa with Baked Tortilla Chips

This salsa is made in a food processor, so you don’t have to worry about chopping tomatoes all day. Ingredients

Salsa
  • 4 large tomatoes
  • 2 scallions or 1/4 of a small onion, trimmed and sliced
  • 1/4 cup fresh cilantro or parsley
  • Juice from 1/2 a lime
  • 1 tablespoon olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon chili powder (optional)
  • 1/4 teaspoon ground cumin (optional)
Tortilla Chips
  • 6 small corn or flour tortillas
  • Oil
  • Salt

Instructions

  1. Cut tomatoes into 8 wedges. Scoop seeds into a bowl and gently squeeze out any excess liquid from the tomatoes. If you skip this step, your salsa will be very watery. Cut tomato wedges into chunks and add to a food processor.
  2. Add remaining salsa ingredients and pulse until roughly chopped. Stop a couple times to check the salsa and scrape down the sides. You don’t want to over blend and get tomato soup.
  3. For Chips: Preheat oven to 375 degrees F. Line a sheet pan with parchment paper. Brush both sides of each tortilla with oil. Sprinkle one side with a pinch of salt. Cut tortillas into 8 wedges (I like to use a pizza wheel) then lay them out individually on the pan. They can be touching but try not to overlap tortilla pieces. Bake until golden brown, 10 to 12 minutes. Check on chips often because they can burn easily. Allow to cool then serve with salsa.

Green Lunch

We love making whole meals in one color! Have your children pick 4-5 green colored foods to serve for a meal. They can even help prepare them with you! Serve them up on a color themed plate or even in a muffin tin to make it more like a sampling platter.
