Sweet potato hash browns make a delicious and extra nutritious side dish for breakfast! Sweet potatoes are tough to make crispy so be sure to wring out as much moisture as possible after shredding the sweet potatoes, if you do this step you'll be rewarded with this tasty treat!

Sheet Pan Sweet Potato Hash Browns

Sweet potato hash browns make a delicious and extra nutritious side dish with breakfast!

Ingredients

  • 2 medium sweet potatoes
  • 2 tablespoons olive oil
  • 2 tablespoons flour, any kind
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 400 degrees F. Peel and grate the sweet potatoes using the largest setting on a cheese grater.
  2. Place the grated sweet potato on a clean towel and wring out as much moisture as possible (don't skip this step if you want crispy sweet potatoes!).
  3. Transfer the grated sweet potato to a large bowl and add the olive oil, flour, onion powder, garlic powder, salt, and pepper. Mix well so the grated sweet potato is evenly coated.
  4. Spray a cookie sheet with cooking spray and place the grated sweet potato on in an even layer.
  5. Bake for 15 minutes, flip using a spatula, and bake for another 10-15 minutes. Check to make sure that the sweet potato does not burn.
