Take pancakes beyond breakfast and serve them as a snack or a side dish at lunch or dinner. You can mix up the base pancake batter and really add in anything you'd like. For the sweet pancakes, add in fruit, like blueberries or diced strawberries. For a savory pancake, keep the batter as written or add soft herbs like chives or chopped cilantro. You could even add in extra veggies like shredded zucchini or diced bell peppers. Serve sweet pancakes as is or with a drizzle of maple syrup or honey. The savory pancakes are great with avocado or spread with a little cream cheese and made into sandwiches. Try both recipes and come tell us whether you are on team sweet or on team savory! Fresh corn is so versatile so be sure to have your children try it in a variety of ways! It is delicious in cornbread, corn muffins, corn soups, and corn salads, so why not make a kid favorite, pancakes, and try them out in both sweet and savory ways?!

These falafel patties are packed with peas! Your little chefs will love adding all of the ingredients to the food processor, pushing the button, and helping to make the patties with their hands. Not only are these fun to make, but you can enjoy them in so many different ways. Eat them like "nuggets" with Greek yogurt for dipping, in pita bread, or on top of lettuce leaves with any toppings you'd like. You can even make the patties a little bigger and eat them on a bun as a burger or cook the falafel mixture in a waffle iron to make Pea Falafel Waffles. Any way you cook them, falafel is the perfect way to enjoy peas!

Turning crunchy, fresh celery into a warm and creamy soup allows kids to experience celery in a whole new way! Cut the potato and celery into sticks and have your little chef chop the veggies into chunks and carefully add them to the pot. When chopping, don't forget to include the leaves attached to the celery; they add so much celery flavor to the dish. While the soup is simmering, taste-test some raw celery with a dip or make little ants-on-a-log bites with celery, nut butter, and dried cranberries or raisins. Blueberries for blue, carrots for orange, yellow bell pepper for yellow, tomatoes for red, and purple cabbage for purple. Salads may not be the first thing that comes to mind when thinking of kid food, but making it full of color and having them help pick the ingredients makes it a little more exciting. You could literally just stick to the tomato section this week and just get different varieties of tomatoes because there are so many! This is a great time to make some of their favorites like ketchup and red sauce to show them that some of the things they love are made with this pretty red fruit. And calling it a fruit is such a selling point for my picky eater! This week we ventured out of the produce department and snagged some red lentils. They are packed with incredible nutrition such as vitamin C which supports our immune system and increases iron absorption as well as lycopene, an antioxidant that helps reduce the risk of cancer. You can imagine my excitement when I learned that August is TOMATO month at Veggie Buds Club! I hope this month your little ones enjoy trying tomatoes in all sorts of ways including the fun and easy bruschetta recipes below! All three recipes only have 3 ingredients so getting your children involved will be super easy! Peach BruschettaMix together 1 diced peach, 8-10 diced cherry tomatoes, and 1-2 tablespoons of hemp hearts. Add to your favorite whole grain crusty bread and serve! Feta BruschettaMix together 1 cup of Tomberries, 10 pieces of thinly cut baby spinach, and 1/2 cup crumbled feta cheese. Add to your favorite whole grain crusty bread and serve!
