This green smoothie is packed with nutrition from the 2 heaping cups of kale inside but the frozen tropical fruit masks that dark leafy green flavor and makes for one delicious drink! This smoothie is definitely kid-approved and a great way to start the day or get your greens in during snack time.

Exposing children to kale in a smoothie form is a great first recipe for kiddos that may be to scared to try it in a salad, "chips", or a baked good yet. Have your child help make this smoothie with you so they can watch the dark leafy greens transform into a pretty light green smoothie!

Learn to Love Veggies Tip

Adding veggies to smoothies is a great way to introduce vegetables to children who are still apprehensive about eating them plain. Have your child make this smoothie with you so they know the cauliflower is in it, once they press the start button it's like magic... *poof* the cauliflower disappears!

Kale "Monster" Smoothie Bowls

Kiddos scared to try kale? Make it into a sweet monster! A smoothie bowl is thicker than a smoothie but softer than ice cream. You can add a little extra milk to the recipe and drink it if you’d prefer. Frozen bananas make this snack sweet and creamy, and you really can’t taste the kale at all. This interactive and delicious snack that’s packed with kale was created by Happy Kids Kitchen for Veggie Buds Club.

"Learn to Love Veggies" Tip

This is a silly snack that your kids will definitely be excited to eat! Make sure your little chef rips up the kale leaves and adds them to the blender, so he/she knows those super greens are in there. Have a chocolate lover or a child that prefers not to see green? Add a couple tablespoons of cocoa powder and you’ve got a chocolate monster! Slice some fruit and get out toppings such as nuts or seeds and let the kiddos make silly or scary monster faces on top.

Ingredients

  • 1 packed cup kale leaves
  • 1 frozen banana
  • 2 tablespoons almond butter, peanut butter, or sunflower seed butter
  • 1/4 teaspoon vanilla extract
  • 2 to 4 tablespoons milk (any kind)
  • Fruit and toppings such as strawberries, blueberries, seeds, and chopped nuts

Instructions

  1. Rip up kale leaves (be sure to remove any tough stem) and add to a blender with the frozen banana, nut/seed butter, and vanilla extract. Add 2 tablespoons of your milk of choice, but don’t add too much or the smoothie won’t be thick.
  2. Blend until smooth, adding more milk if needed. Smoothie melted or not thick enough? Blend in ice until the desired consistency is reached.
  3. Spoon smoothie “ice cream” into bowls and create a flat surface with the back of a spoon. Decorate with toppings. Enjoy!

Notes:

To make the chocolate version, add 2 tablespoons of unsweetened cocoa powder or cacao powder to the blender with the other ingredients.

Cucumber Melon Cooler

Cucumber and melon make such a great flavor combination in this refreshing summer drink created by Happy Kids Kitchen for Veggie Buds Club!

​This recipe presents kids with the chance to practice those knife skills and chop up some cucumbers. Since the cucumber is getting blended in the end, you don’t have to worry about what size or shape kids cut the cucumber and melon pieces into. Throw the peeled, chopped cucumber into the blender with some melon, a little lemon juice, and a touch of sweetener (if you’d like) and blend it all up. I used a Honeydew melon to keep the blended juice green, but you can use any ripe, sweet melon for this recipe.

"Learn to Love Veggies" Tip

Kids can experience the taste of cucumber without having to chew it, so this drink is great for little ones that might be apprehensive about the texture of cucumber.

  1. Add all ingredients to a blender. Blend until smooth.
  2. Serve over ice with extra cucumber slices and/or balls of melon, if desired.

We have compiled some of our favorite veggie-packed breakfasts into 3 categories: Savory, Baked Goods, and Smoothies. Each recipe below includes veggies, is delicious, and is simple to make!

Savory Veggie-Packed Breakfast Ideas

Sweet Potato Quiche: This tasty quiche is packed with veggies and bacon (optional) and swaps the standard crust with shredded sweet potato instead for an extra veggie boost.
Savory Corn Pancakes: These savory pancakes are great with avocado or spread with a little cream cheese and made into sandwiches. Yum!
Sweet Potato Toasts​: These sweet potato toasts are so versatile because they are delicious both sweet and savory. That’s what makes them the perfect toast substitute!

This recipe also includes some optional frozen cauliflower for an extra veggie-boost. Jack-o-Lantern Smoothie

Jack-o-Lantern Smoothie

Yield: 3 8-ounce smoothies

Need a quick, easy, and delicious snack that celebrates pumpkin? Try this sweet, refreshing smoothie that tastes just like pumpkin pie. This recipe also includes some optional frozen cauliflower for an extra veggie-boost.

  • 2/3 cup pumpkin puree, homemade or canned
  • 1 banana, frozen
  • 1/2 cup frozen riced cauliflower (optional)
  • 1/3 cup plain Greek, regular, or dairy-free yogurt
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon pumpkin pie spice or additional cinnamon
  • 1 tablespoon maple syrup or 1 pitted date
  • 1/2 cup milk (any kind)
  • 1 cup ice

Instructions

  1. Add all of the ingredients to a blender and blend until smooth. Add additional milk to make a thinner smoothie or blend in more ice to thicken the smoothie.
  2. Pour into cups and serve with a fun, reusable straw.

How to Make Jack-O-Lantern Cups
You can make Jack-O-Lantern cups two ways:
  1. If using a plastic cup, draw a jack-o-lantern face directly onto the cup with a black marker. Sharpie permanent markers seems to work best.
  2. If using a glass jar or cup, cut triangle “eyes” and a mouth shape out of black construction paper. Use tape or a glue stick to attach the paper to the glass (the paper easily peels off and glue washes off).

Not only are these treats made with a handful of wholesome ingredients, they are packed with nutritious zucchini! If you want to enjoy this treat right away, there are also instructions below on how to turn this recipe into a frosty milkshake.

Ingredients

  • 1 medium zucchini
  • 1 can full fat coconut milk*
  • 1/4 cup almond butter, peanut butter, or sunflower seed butter
  • 3 to 4 large dates, pitted or 3 tablespoons maple syrup
  • 3 tablespoons unsweetened cocoa powder or raw cacao powder
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Trim ends off zucchini and cut into strips. Your child can now help cut the zucchini into a dice. Measure 2 cups of the diced zucchini and add to a blender.
  2. Add remaining ingredients and blend until very smooth. Taste and add more sweetener if you’d like.
  3. Pour blended mixture into popsicle molds and freeze overnight. Allow frozen pops to sit out at room temperature for about 1 minute before enjoying. If you don’t have popsicle molds or want to enjoy this treat right away, blend 2 cups of ice into the chocolate zucchini mixture and drink like a milkshake!
  4. *If you don’t want to use coconut milk, feel free to substitute 1 cup plain yogurt and 1/2 cup milk of your choice.

Ants on a log is a super common snack for kids to expose them to the taste and texture of celery. But what about the children that struggle with the intense crunch or the “celery strings”? Exposing kids to celery in a smoothie is a great start, you can gradually move up in exposure with cooked celery in stir fries and eventually raw celery on veggie plates.

Chocolate Cauliflower Milkshake

Chocolate and cauliflower? Yes, please! Frozen cauliflower makes smoothies thick and creamy but you don’t taste it at all. The taste and texture of steamed and frozen whole florets is best but you can also use frozen riced cauliflower in this recipe.

Ingredients

  • 1 heaping cup frozen cauliflower florets* (or 1 cup frozen riced cauliflower)
  • 1 frozen banana
  • 2 pitted dates (or 1 to 2 tablespoons maple syrup)
  • 2 tablespoons almond butter (or any nut/seed butter)
  • 1 tablespoon chia seeds, optional
  • 3 tablespoons raw cacao (or unsweetened cocoa powder)
  • 1 cup milk (any kind)
  • Handful of ice cubes
  • Mini chocolate chips and/or chocolate sprinkles for toppings

Instructions

  1. Add all ingredients except for toppings to a blender. Blend, stopping once or twice to make sure no chunks remain. Add in additional ice to make thicker or more milk to thin out the drink. Pour into glasses then sprinkle with any desired toppings. Enjoy!​​
  2. Have some milkshake leftover? Freeze in popsicle molds to enjoy later as a frozen treat!

Notes:

*To make frozen cauliflower florets, first cut a head of cauliflower into medium sized pieces. Steam cauliflower until tender, drain, and set aside to cool. Once cool, freeze in a singer layer until solid then store in a container or plastic bag in the freezer.

As they add the ingredients you can have conversations about the color and texture of the various foods, count them as you add foods in, and for many recipes there are times of taking turns and following instructions. Also, children who help prepare foods are more likely to eat them. So it is a win-win!!

  • 2-3 ice cubes

Instructions

  1. Blend all ingredients together in a high powered blender and serve with a fun straw!
