"Learn to Love Veggies" Tip

Get your kids in the kitchen with you! Have your children break apart the broccoli heads into florets with their hands... kids LOVE this step. The broccoli is going to be steamed and pulsed in a food processor so the florets do not need to be uniform in size. 
Epic Broccoli Burgers

These Epic Broccoli Burgers are sure to turn all of your family members into veggie burger lovers! They are packed with broccoli, carrots, onion, bell pepper, and chickpeas so be sure to save this recipe for your next "Meatless Monday" meal.

Ingredients

  • 1 big head of broccoli
  • 1 carrot
  • 1/2 bell pepper
  • 1 onion
  • 3-4 cloves of garlic
  • 2 tablespoons ground flaxseed
  • 1 15-oz can of chickpeas
  • 1 tablespoon mustard
  • 1 tablespoon ground pumpkin seed or 1 additional tablespoon ground flaxseed
  • 1/2 teaspoon paprika
  • 1/2 cup of flour, any kind
  • Salt and pepper, to taste
  • Olive oil
  • Optional toppings: lettuce, tomato, onion, cucumbers, barbecue sauce, ketchup, etc.

Instructions

  1. Cut the broccoli into small pieces and wash it. Bring some water to a boil in a pot, add the broccoli florets, and simmer for 10 minutes.
  2. On a cutting board, mince the carrot, pepper, onion, and garlic. In a pan, add 1 tablespoon of olive oil and saute the veggies until they are cooked.
  3. Meanwhile, make a flax egg: in a small bowl, add 2 tablespoons of ground flaxseed and 4 tablespoons of water. Let it sit for 5 minutes.
  4. Once the broccoli is done cooking, rinse it with cold water and place it in the food processor. Add the chickpeas, mustard, ground pumpkin seeds (or additional ground flaxseed), paprika, and flax egg. Mix until it becomes dough-like. Add 1-2 tablespoons of olive oil if it's hard to blend.
  5. Add the roasted veggies to the food processor and mix just a bit. Make sure that at least half of the veggies are not fully blended.
  6. Transfer the mixture to a bowl, add the flour and mix. If the mixture looks too wet, add more flour.
  7. Separate the mixture into 8 parts and form them into burger patties.
  8. In a pan, add a little bit of oil and cook the patties for a few minutes on each side until they are golden brown.
  9. Place the patties on a bun, add toppings (tomato, onion, cucumber, lettuce, etc.), and sauce. Enjoy the burgers!

Chickpea Pot Pie

Your whole family is sure to love this vegetarian spin on a classic pot pie! This filling and nourishing meal is packed with veggies (corn, peas, and carrots!) and is rich in plant-based protein from the chickpeas. The recipe is adaptable for vegetarian, vegan, and gluten-free diets.

Chickpea Pot Pie

Your whole family is sure to love this vegetarian spin on a classic pot pie! This filling and nourishing meal is packed with veggies (corn, peas, and carrots!) and is rich in plant-based protein from the chickpeas.

Ingredients

Crust
  • 1 package quality pie crusts, softened to package directions (gluten-free if preferred)
Filling
  • 1/3 cup coconut oil or butter
  • 1/2 small onion, chopped fine
  • 1/3 cup all-purpose flour or gluten-free flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 3/4 cups vegetable broth
  • 1/2 cup milk, any kind
  • 2 cups cooked chickpeas (if using canned, be sure to drain and rinse)
  • 2 cups frozen mixed vegetables (peas, corn, carrots), thawed

Instructions

  1. Heat oven to 425 degrees F. Prepare pie crusts as directed for a two crust pie using a 9-inch glass pie pan.
  2. Melt coconut oil or butter over medium heat in a 2-quart saucepan; add onion; cook 2-5 minutes, stirring frequently, until translucent; stir in flour, salt and pepper until well blended; stir in broth and milk, cooking and stirring until thick and bubbly.
  3. Add in chickpeas and mixed vegetables; remove from heat. Spoon chickpea mixture into crust-lined pan. Top with second crust; seal edge using a fork. Cut slits in several places in top crust.
  4. Bake 30 to 40 minutes or until crust is golden brown. During last 15 to 20 minutes of baking, cover crust edge with strips of foil to prevent excessive browning. Let stand 5 minutes before serving.

Sometimes kids will surprise you and take a bite of a veggie that's not cut in a "normal" shape such as a bell pepper strip or carrot "coin". Don't be surprised if your kiddo decides to take a big bite out of the bell pepper jack-o-lantern like they'd take a bite of an apple!

These Pepper Pumpkins are a festive and simple jack-o-lantern inspired snack!

Ingredients

  • Orange bell pepper
  • Dip for inside such as Hummus or Ranch
  • Food for dipping such as peppers, cucumbers, pretzels, etc.

Instructions

  1. Cut the top of the bell pepper off in a straight line. Open it up and remove the seeds and veins inside the pepper. Take your child-safe knife (or have an adult use a sharp knife) and cut two triangles out of the side of your pepper. Next, cut the shape of a mouth below the eyes. Remove the cut pieces from the pepper.
  2. Next, fill it with your favorite dip and dippers! The best part is that you can eat the whole thing after you eat the inside!

What is food chaining? Food Chaining is a child-friendly treatment approach that helps introduce new foods while building on the child’s past successful eating experiences. In this process, the child is presented with new foods that may be similar in taste, temperature, or texture to foods the child already likes and accepts. If your child likes pretzels dipped in hummus, they may be open to trying cucumbers dipped in hummus!

These cucumber butterflies are so easy to make and so adorable! This is a healthy kid-friendly snack that your kids are sure to love.

Ingredients

  • Cucumbers
  • Hummus
  • Bell Peppers
  • Pretzels

Instructions

  1. Cut the cucumber into 1-inch long chunks. Don’t peel! Use a melon baller or spoon to scoop out a hole in the cucumber.
  2. Slice bell peppers into thin strips and set aside. Spoon hummus into the open cup you created in the cucumber.
  3. Stick two pretzels into the hummus to create wings and put the bell pepper strips into the front as antennae.

Have your child scoop the Chickpea Salad onto lettuce "boats" all by themselves. Calling the lettuce "boats" makes this veggie a little more interesting and will hopefully help your kiddos try this crunchy green!

Mashed Chickpea Salad Lettuce Boats

This mashed chickpea salad is a vegetarian version of the classic tuna salad and is a perfect no-cook meal that you can easily make in minutes.

Ingredients

  • 1 1/2 cups cooked and drained chickpeas
  • 1 stalk celery, diced
  • 1-2 teaspoons lemon juice or apple cider vinegar, or to taste
  • 1-2 teaspoons Dijon mustard
  • 1/4 cup mayo or Greek yogurt, or to taste
  • 1/8-1/4 teaspoon onion powder, or to taste
  • Salt & pepper, to taste
  • Lettuce leaves, washed and patted dry

Instructions

  1. Pour the cooked and drained chickpeas into a medium bowl. Using a potato masher or fork, mash the chickpeas until there are no more whole beans and to your desired consistency.
  2. Add diced celery, lemon juice/apple cider vinegar, mustard, mayo/Greek yogurt, onion powder, salt and pepper to the bowl. Mix well.
  3. Taste and adjust seasoning if needed. Add more mayo/yogurt for a creamier salad.
  4. Arrange the prepped lettuce leaves (these will become your “boats”) on a serving platter or individual plates. Fill each one with a scoop or two of the mashed chickpea salad.
  5. Enjoy as is or top with sliced tomatoes, shredded carrots or diced avocado.

Pea Falafel

These falafel patties are packed with peas! Your little chefs will love adding all of the ingredients to the food processor, pushing the button, and helping to make the patties with their hands. Not only are these fun to make, but you can enjoy them in so many different ways. Eat them like "nuggets" with Greek yogurt for dipping, in pita bread, or on top of lettuce leaves with any toppings you'd like. You can even make the patties a little bigger and eat them on a bun as a burger or cook the falafel mixture in a waffle iron to make Pea Falafel Waffles. Any way you cook them, falafel is the perfect way to enjoy peas!

Butternut Squash Hummus

Butternut squash and sweet potatoes can be added to so many dishes to increase nutrient density. From soup to macaroni and cheese to dips, these gorgeous orange veggies fit into them all! The hummus recipe below is a favorite in our house year-round with its savory taste and smooth texture. And this time of year it is a nice compliment to a tray of festive colored veggies. So whether you need a nutritious after school snack for your kids or a colorful dish for the neighborhood potluck, we have you covered!

Butternut Squash (or Sweet Potato) Hummus

Ingredients
  • 1 butternut squash*
  • 1 can chickpeas, drained and rinsed
  • 2 tablespoon tahini (or SunButter)
  • 2 tablespoons olive oil
  • 1 clove of garlic, minced 
  • 1/2 tablespoon honey mustard
  • 2 tablespoons lemon juice 
Instructions
  1. Cut open and roast butternut squash at 375F for 30-40 minutes (or until it is soft throughout). 
  2. Scoop the contents into a food processor and add chickpeas, olive oil, garlic, lemon, and honey mustard.
  3. Blend on low for 3-5 minutes (until all is mixed well). 
  4. Serve with your favorite vegetables, crackers, or on a wrap, sandwich, or pita.
*This recipe also works well with 1 large or 2 small sweet potatoes in place of the butternut squash.

We are excited to bring you this month's post from Katie Blauser, the creator of Eat Pretty Darling. Each month on our blog we feature a "Color of the Week" that corresponds with Veggie Buds Club's veggie of the month. September's veggie is SWEET POTATO so we're focusing on BROWN veggies this month!

Color of the Week - Brown

Brown might not be the first color that comes to mind when you think of pretty food, but there are so many great brown options out there. Some are just brown on the outside, like sweet potatoes! We were all around the store for this week’s color. From produce, to eggs, to nuts, and spices. So many of our family’s favorite foods are brown! This week we got sweet potatoes, brown eggs, Bosc pears, pecans, and cinnamon. Sweet potatoes are so versatile because they are delicious both sweet and savory. That’s what makes them the perfect toast substitute! I can’t decide which way I like them best so I like to make one a little salty and one a sweet treat. It’s a great way to get in some extra veggies in those bellies. Picking out the toppings is half the fun so make sure to let the kids help!

Sweet Potato Toasts

Ingredients
Toasts
  • 1 large sweet potato (peeled if you want)
Toppings
(The topping ideas are endless but we tried sticking to brown foods!)
  • Peanut butter
  • Pears
  • Honey
  • Eggs
  • Hummus
  • Pecans
  • Cinnamon
  • Yogurt
Instructions
  1. Preheat oven to 350℉. Place a wire rack on a large baking sheet. Trim both ends from the sweet potato using a knife. Slice sweet potato lengthwise into 1/4-inch thick slabs using a knife or mandolin if you have one.
  2. Arrange sweet potatoes in a single layer on the wire rack. Bake for 30 minutes (depending on thickness) or until potatoes are tender but not totally cooked.
  3. If not making toast right away, remove and allow potatoes to cool on wire rack completely before transferring to a covered container. Store in the fridge for up to 4 days. When you are ready to make the toast, place sweet potato slices in the toaster. Toast until hot and edged are crispy. How long it takes will depend on thickness of potatoes and your toaster.
  4. Top with your favorite toppings and enjoy!
