Breakfast is an important meal that gives you energy to get the day started. But often a major food group is missing from your breakfast plate or bowl... veggies!

We have compiled some of our favorite veggie-packed breakfasts into 3 categories: Savory, Baked Goods, and Smoothies. Each recipe below includes veggies, is delicious, and is simple to make!

Savory Veggie-Packed Breakfast Ideas

Sweet Potato Quiche: This tasty quiche is packed with veggies and bacon (optional) and swaps the standard crust with shredded sweet potato instead for an extra veggie boost.
Savory Corn Pancakes: These savory pancakes are great with avocado or spread with a little cream cheese and made into sandwiches. Yum!
Sweet Potato Toasts​: These sweet potato toasts are so versatile because they are delicious both sweet and savory. That’s what makes them the perfect toast substitute!
Rainbow Fried Rice: This rainbow fried rice from Happy Kids Kitchen is colorful, easy, healthy, and delicious for breakfast!

Outrageous Orange Granola

Orange you glad it’s pumpkin season?? We gathered our favorite orange veggies to pair with pumpkin: sweet potato and carrots! Did you know you can add veggies to granola!? Yes, this granola is packed with a veggie punch and it tastes delicious! Our orange foods makes this the perfect topping for yogurt, great to eat with milk, or just by the spoonful.

"Learn to Love Veggies" Tip

Ask your kids how many orange veggies and fruits can they think of? Take turns! They say an orange veggie/fruit, then you say an orange veggie/fruit, and so on. Making veggies "fun" and part of a game will make them less "scary" at meal time.

Outrageous Orange Granola

Did you know you can add veggies to granola!? Yes, this granola is packed with an orange veggie punch (carrot, pumpkin, and sweet potato!) and it tastes delicious.

Ingredients

  • 3 cups rolled oats
  • 1/3 cup sunflower seeds or pumpkin seeds
  • 1/4 teaspoon sea salt
  • 3/4 teaspoon pumpkin pie spice
  • 1/4 cup coconut oil
  • 1/3 cup maple syrup
  • 1/4 cup pumpkin purée
  • 2 tablespoons finely shredded carrot
  • 1/4 cup cooked sweet potato

Instructions

  1. Preheat oven to 350 degrees F. In a small saucepan, whisk the coconut oil, maple syrup and pumpkin purée together on low heat.
  2. Mix together the oats, seeds, spices, and salt in a large bowl. Quickly pour the saucepan mixture on top of the oats once it is warmed. Mix with a wooden spoon.
  3. Spread out the mixture on two large baking sheets. Bake for 25-35 minutes, stirring halfway. Once the mix is golden brown it is ready to be removed from the oven.
  4. Once it has cooled completely, transfer to an airtight container. It will keep for around 2 weeks.

Carrot Cake Muffin Tops

The top of the muffin is the best part, right?! These wholesome treats are a combination of a tender muffin and an oatmeal breakfast cookie. We love them for breakfast or a snack at my house, and this carrot cake version is a must try.  The muffin tops are great as is but sometimes I also like to mix in a 1/4 cup of chopped walnuts and a 1/4 cup of raisins to make them extra special.

Get your kids in the kitchen! Have your little chef help grate the carrot, measure the ingredients, and mix everything together in a big bowl.
Carrot Cake Muffin Tops

Carrot Cake Muffin Tops

Yield: 8-10 large muffin tops

The top of the muffin is the best part, right?! These wholesome treats are a combination of a tender muffin and an oatmeal breakfast cookie. Eat them for breakfast or a snack anytime of the day!

Ingredients

  • 1 medium carrot, peeled and end trimmed
  • 1 ripe banana, mashed or 1/2 cup unsweetened applesauce
  • 2 eggs*
  • 3 tablespoons neutral oil
  • 3 tablespoons maple syrup or honey
  • 1 tablespoon orange juice
  • 1 teaspoon vanilla extract
  • 3/4 cup quick-cooking rolled oats
  • 3/4 cup almond flour, oat flour, or whole wheat flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon fine salt

Instructions

  1. Preheat the oven to 375 degrees F and line a baking sheet with parchment paper or lightly grease with oil.
  2. Shred carrot on the smaller holes of a box grater until you get 3/4 cup grated carrot. Add the carrot to a large bowl along with the mashed banana (or applesauce), eggs, oil, maple syrup, orange juice, and vanilla. Whisk to combine.
  3. Add the oats, flour, baking powder, cinnamon, and salt. Stir until all ingredients are combined. Stir in nuts and raisins, if using.
  4. Scoop batter onto the prepared pan using a large cookie scoop or 1/4 cup measuring cup. Flatten the tops of each mound slightly with the back of the scoop or cup.
  5. Bake muffin tops until cooked through and golden brown around the edges, 10 to 12 minutes. Store cooled muffin tops in a container at room temperature for 2 days or in the refrigerator for up to a week.

Notes:

​*For an egg-free version, use 2 tablespoons ground flax seed mixed with 6 tablespoons of water.

This adorable Carrot Bouquet food art project is sure to be a hit with your kiddos! It was developed by Eat Pretty Darling for Veggie Buds Club.

"Learn to Love Veggies" Tip

If your kiddos are still learning to like carrots, try making them into a fun flower shape! If you have a flower shaped mini cookie cutter, you could use that too. But all it takes is a few simple cuts and you will have a lovely bouquet.

Ingredients

  • Rainbow Carrots
  • Cucumber
  • Dip - we love hummus for carrots!

Instructions

  1. Peel a large carrot (if using baby carrots, no need to peel). Cut out notches in the sides of carrots to make different designs or just leave them as circles. Slice the carrots into rounds and reveal your flower design.
  2. Arrange them in a bouquet or just eat the yummy carrot flowers! Serve with a dip such as hummus or ranch.

We are excited to bring you this month's post from Katie Blauser, the creator of Eat Pretty Darling. Each month on our blog we feature a "Color of the Week" that corresponds with Veggie Buds Club's veggie of the month. December's theme is "Root Veggies Rule!", and we're having fun this month by celebrating PURPLE veggies in a yummy and kid-approved Purple Veggie Platter.

Color of the Week - Purple

This week is all about PURPLE! The neat thing is, some of the veggies we found had purple outside, but no purple to be found inside. We stuck to root veggies and the color purple and found some new things to try. We’ve been playing the matching game from Veggie Buds Club so much this month that my oldest knew exactly what to look for and their names! He had fun seeing the drawings come to life in real vegetables at the store.
We gathered up Purple carrots, Turnips, Rutabaga, and Beets. I thought it would be a fun week to see how all of the varying vegetables taste different. We sampled each one on it’s own and talked about how they taste. We all agree beets taste like dirt! Turnips were kind of spicy, Carrots were sweet, and Rutabaga was like french fries. I served them with plain yogurt but my oldest also wanted to see what they tasted like with different dips so we later added ketchup and peanut butter.

Purple Veggie Platter

Ingredients
You can use any root veggies!
  • Purple Carrots
  • Turnips
  • Rutabaga
  • Beets
  • Avocado Oil to coat
  • Salt & Pepper to taste
Instructions
  1. Preheat the oven to 425F. Peel and chop the vegetables to try and make them all similar sizes so they cook the same time.
  2. Drizzle oil on veggies and toss to coat in a large bowl. Sprinkle salt and pepper to taste. Line a baking sheet with parchment paper and lay the veggies out flat on the tray. Bake for 30-40 minutes or until soft.
  3. Serve as a sampler tray with the any dip/s of choice!

Root Veggie Latkes

Turn a bowl full of winter root veggies into crispy fritters to enjoy any time of day. Top the veggie pancakes with a little Greek yogurt, sour cream, or even applesauce. If you have a French fry fan or potato lover, these are sure to be a hit!

"Learning to Love Veggies" Tip

Get your kids in the kitchen! Have your little chef help peel and grate the veggies, either by hand, with a box grater, or using a food processor. Crack the eggs together, then mix in a couple more ingredients and you are ready to cook. 
Root Veggie Latkes

Root Veggie Latkes

Turn a bowl full of winter root veggies into crispy fritters to enjoy any time of day. Top the veggie pancakes with a little Greek yogurt, sour cream, or even applesauce. If you have a French fry fan or potato lover, these are sure to be a hit!

Ingredients

  • 2 cups peeled, shredded potato (about 1 large Russet potato or 2 smaller Yukon Gold potatoes)
  • 1 cup shredded turnip
  • 1 cup shredded carrot, parsnip, and any other root vegetable or combination of root vegetables
  • 2 eggs*
  • 1/4 cup flour (any kind)
  • 1/2 teaspoon coarse salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Neutral oil, for cooking

Instructions

  1. Place shredded potato in a kitchen towel and squeeze out any excess moisture. Add the potato and other shredded vegetables to a large bowl.
  2. Have your child help you crack the eggs into a separate small bowl then beat eggs with a fork to scramble. Add eggs and remaining ingredients (except the oil) to the shredded vegetables and stir well to combine.
  3. Using your hands, make small patties of the vegetable mixture, squeezing together to remove any excess liquid as you form each one. Lay patties out onto a parchment lined pan or plate.
  4. Heat a cast iron or other skillet over medium heat. Add one tablespoon of oil to coat the bottom of the pan. Cook vegetable cakes until golden brown, 4 to 5 minutes per side, adding more oil to the pan as needed after each batch. Sprinkle the tops with a little salt and eat warm. Store any leftover veggie latkes in the fridge and reheat in the oven or toaster oven for best results.

Notes:

*For egg-free latkes, substitute eggs for 2 tablespoons of ground flax mixed with 4 tablespoons of water. Latkes will be a little bit softer but still hold together.

Color of the Week - Rainbow

Some weeks we like to have a little fun and instead of picking a color, we pick all of the colors! Rainbow is a color in our book. We grabbed one item in each color to go with our green kale in this month’s Veggie Buds Club box. My son picked some of his favorites for each color. Blueberries for blue, carrots for orange, yellow bell pepper for yellow, tomatoes for red, and purple cabbage for purple.
Salads may not be the first thing that comes to mind when thinking of kid food, but making it full of color and having them help pick the ingredients makes it a little more exciting. The fun thing about this recipe is you could use almost any fruits or veggies that fit the colors, as long as you try to make a rainbow! Have your kids be a part of it from start to finish.

Rainbow Kale Salad

Ingredients
  • 3 cups kale, stem removed and finely chopped
  • 1 medium yellow pepper
  • 1 cup shredded carrots
  • 1 cup diced tomatoes
  • 1 cup shredded purple cabbage
  • 1 cup blueberries
Dressing
  • 2-3 tablespoons olive oil
  • Zest and juice of 1 lemon
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper
Instructions
  1. Place kale in a large bowl. Mix all dressing ingredients in a small jar. Shake it well to combine.
  2. Drizzle dressing on top and gently massage dressing into kale (this is a fun part for the kids!). Add in remaining ingredients and toss to coat the vegetables in the dressing.
  3. Cover and place in the fridge to let the kale become a little more tender.

1. Read Books!

Here are some of our recommended books featuring veggies & fruit and the letter "A":

2. "A" is for Apple Craft

Both my 2 and 4 year old had fun with this craft! I cut out some apple seed shapes and drew the lower case letter "a" and apple stem on construction paper. My 4 year old was able to trace the word "Apple", cut out the "a" and stem and use a glue stick to put the picture together. I assisted my 2 year old through the whole craft, he particularly enjoyed using the glue stick!

4. Make Applesauce!

Enjoy this simple kid-friendly recipe for Applesauce (we added a carrot because this is Veggie Buds Club!). Your kids can help peel and chop the apples and carrot. Have them measure and add the apple juice and then observe the rest of the process.
Ingredients
  • 4 apples
  • 1 carrot
  • 1/2 cup apple juice
Instructions
  1. Peel and chop apples and carrot.
  2. Add apple juice, chopped apples, and chopped carrot to a large pot.
  3. Simmer for about 20 minutes over medium heat until the carrots are tender
  4. Place softened apples and carrots into a food processor or blender and process/blend until smooth.

6. Apple-Toothpick Building

Here is a simple and fun "snacktivity" that is great for fine motor skills, problem solving, and encourages healthy eating. My 2 year old is not an apple fan (he's more of a berries and grapes guy) and he totally ate up these apple chunks on toothpicks!

7. Apple Oxidation Science Experiment

This is a simple science experiment for young kids! Even if they're too young to process why oxidation happens, it is still great to expose them to the idea of a "science experiment" and "observation". Make sure they observe what the apple halves look like at the beginning of the experiment vs. the end!

Materials Needed
  • Apple 
  • Lemon Wedge
  • Knife
Instructions
  1. Cut the apple in half.
  2. Rub the lemon wedge on the cut side of one of the apple slices.
  3. Place both apple halves on a plate with the cut side exposed to air.
  4. Check on your apple halves in about 3 hours and observe the differences.
The apple half that was not rubbed with lemon juice should have browned a bit and the apple half with lemon juice on it should still look fresh.
There are compounds in apples that turn brown when they are exposed to air which contain oxygen. This process is called oxidation. If you add an acid to the apple this prevents oxidation, and lemons are very acidic.

Carrot Chips with Avocado Ranch Dip

Carrot Chips with Avocado Ranch Dip

Carrot Chips with Avocado Ranch Dip

These carrot chips are a delicious and healthy snack or side dish. Use different color carrots to make the dish even more fun! Dip lovers, be sure to make the simple Avocado Ranch Dip that pairs perfectly with the Carrot Chips. Yum!

Ingredients

Carrot Chips
  • 1/2 teaspoon coarse sea salt or kosher salt
  • 1/2 teaspoon each garlic powder, onion powder, and dried dill
  • 1/8 teaspoon ground black pepper
  • 5 to 6 large carrots, peeled and trimmed
  • 1 1/2 tablespoons vegetable, avocado, or olive oil
Avocado Ranch Dip
  • 1 ripe avocado
  • 1/2 cup plain Greek yogurt or plain, unsweetened dairy-free yogurt alternative
  • 2 tablespoons lemon juice
  • 3/4 teaspoon Ranch Salt (from above)

Instructions

  1. Preheat oven to 450 degrees F and line a sheet pan with parchment paper.
  2. In a small bowl, mix salt, garlic powder, onion powder, dried dill, and black pepper. Set aside.
  3. Cut carrots into 1/8-inch rounds. A crinkle cutter makes a fun shape, but if you don’t have one, cutting with a knife works just as well. If your carrots are on the thinner side, cut slices on an angle to create bigger slices.
  4. Place carrots in a pile on the center of the sheet pan or in a bowl. Drizzle with oil, sprinkle with 3/4 teaspoon of the salt mixture, and toss to coat. Reserve remaining salt mixture for the Avocado Ranch Dip or another use.
  5. Spread carrots out evenly on the pan so none are overlapping. Roast carrots until golden brown, about 20 minutes. Once cool enough to handle, taste for seasoning and sprinkle on more salt if needed. Serve with Avocado Ranch Dip if desired.
  6. To make Avocado Ranch Dip: Cut the avocado in half. Using a spoon, scoop avocado flesh into a food processor or blender. Add remaining ingredients and blend until smooth. Taste and adjust seasoning as needed.
